相對於其他香腸，紐倫堡腸比較幼身。香腸除了用上基本調味料如大蒜，胡椒等醃製，最特別的是它還加入馬鬱蘭，這種香料中和了豬肉的肥膩感，同時亦保留豬肉味，入口後仍有淡淡清新香味，再加上一杯德國啤酒更是完美配搭。
